Stuffed Peppers Quick & Easy Recipe

Yum-O! When you're done the Stuffed Peppers should look something like this!

Ingredients:
  • 4-6 peppers, cut top and clean out seeds
  • 1/2 cup rice cooked
  • Small chopped onion
  • Small can tomato sauce
  • 1/2 can water
  • 1 lb. ground beef
  • Salt & Pepper
  • Thyme

Preheat oven to 350. Brown meat on stove top. My mom got me this hand little tool that breaks up the meat while you stir - a great little time saving device!

Chop onion.

Add cooked rice, onion, ground beef, a dash of thyme, and salt and pepper in bowl and mix.

Hollow out those peppers. Keep the correct tops with the correct peppers - especially when you are making more than 4 it's hard to keep track of the tops.

Fill the peppers with stuffing.

Place their little tops back on and fill the bottom of the dish with an 1/2" to an inch of water.

This recipe would make a solid 5 stuffed peppers - but - I only bought 4, and had some left over. Place the leftovers in a baking dish of some sort and cook it along with the peppers.

Place the peppers and leftover stuffing in the over and cook for 45 min to an hour.

Let the peppers cool for about 10 min before serving - Enjoy!

The leftover stuffing can be served along with the peppers or saved for your lunch!


Both Hunky and I agree that we never at the pepper growing up - but it is our favorite part now! So - don't get too upset if you serve this to kids and they stick up their noses, you could just try giving them the leftover stuffing without the pepper!
