Eggs Betty Lou - Easy Breakfast Recipe

A fabulously easy and delicious way to go about Breakfast! Take about 5 min - that's all you'll need to make yourself a hot meal.

Ingredients:
  • Butter (or some form of it - lately I'm into the more healthy buttery spreads) about 1 tsp
  • Bread - 1 piece
  • Egg - 1
Other Tools:
  • 1 Plate
  • Butter Knife
  • 1 Fork
  • Frying Pan
  • Spatula (the flipping kind)
First things first - Butter one side of the bread

Here's where the plate comes in handy the first time - flip over the bread and place the butter side down in order to butter the opposite side without getting butter all over the place.

Using the butter knife - cut a circle in the center on the bread - eat this :)

Place buttered bread on warmed fry pan. Crack egg into the circle - let sit about 3-5 minuets or until the bread is easy to flip.

After you have flipped the bread, points if you are more neat than I am, give the opposite side around 3-5 minutes to cook. Flip the bread over once more to make sure the opposite side is cooked through.

Season with salt and pepper and pair with a glass of juice.

Enjoy your quick and delicious hot Eggy Sandwich/Eggs BettyLou!

  1. I grew up with these - but we fry the circle too and used to dunk into the yolk :)

  3. Thank you for bringing up a fond memory. These "eggs in a hole" or "eggs in a basket" were my children's favorite breakfast egg dish. I hadn't thought about it in years and haven't fixed it for ages. Think I might do it for a Sunday brunch this weekend.

  4. We used to make something like this for the kids, but we put the circle of bread back on top to hide the egg. My son named it "eggy surprise"!
