To-Do Thursday! It's Breakfast Time

Good morning!

I’m not sure how many people like me there are in this day and age, but let me just tell you that I cannot live without breakfast! It seems that so many people skip this meal altogether because it just isn’t important to them. You could ask my partner, Mason, if you don’t believe me on this: I must stay well fed for others’ safety. (I kind of turn into a monster when I get too hungry.) So breakfast is very important to me and it should be for you as well. :)


Personally, I like an easy breakfast that doesn’t create a huge mess, but cereal doesn’t do it for me. In fact, it only seems to make me even more hungry and scary about an hour after the meal. So here’s a one pan breakfast that can be altered to suit anyone’s appetite and tastes. Enjoy!


Veggie Pan-Scramblers



Ingredients:

2 tbsp olive oil

1/4 cup frozen hash browns

3 tbsp chopped peppers

3 tbsp chopped mushrooms

2 tbsp diced tomatoes

dash of Club House Garlic Plus seasoning

2 eggs

grated cheese to top


Directions:

Put the oil in a frying pan and heat for a minute. Toss in hash browns and season with Garlic Plus. Cook for 2 minutes, then add peppers and mushrooms. Cook these together for about 5 minutes until veggies have softened. Crack the eggs in the pan and stir well. Continue stirring often until eggs are fully cooked. Remove from pan and top with grated cheese. Serve with toast (and maybe a little ketchup!)


This quantity will serve one person with a decent appetite. You also don’t have to measure if you prefer not to. I usually just toss in the amount of each ingredient that I think I will eat. Also, you can add or take away any of the ingredients. I’m not a big meat eater at breakfast, but you might be! Using egg whites only is a great way to reduce calories or make this meal more cholesterol-friendly as well. In the summer and fall this is an even tastier dish when you use fresh vegetables.
